I’M BACK!!…and College Life

It’s been almost two years now since I last posted. My life has completely changed from the time I last wrote to now. I’ve moved to Minneapolis and finished my first year of college. I’ve made new friends and started new jobs. There’s just so much that has changed since I last updated!

City life is so much different than country life. There’s constantly people milling about and cars, buses, trucks and trains always in a rush, coming and going not resting a moment….but, there’s beauty in the craziness. There’s beauty in the diversity of the people, and it seems almost every block there’s another ethnic group. The different cuisines are endless and I keep discovering a new favourite! There are museums, and cool bridges (aka. Stone Arch Bridge), theatres, historical buildings, coffee shops, bike trails and lake fronts. There’s so much here to explore and discover! And it’s all at my fingertips! After living here for almost a year, I’ve grown very fond of the city and all its adventures, yet a small town endearment still burns in my heart. And I know deep down inside that I will always love my small town heritage.

College life is so intense, literally, all I did last winter was go to class, go to work, and then come home and study, read, and write! Every. Single. Day!…..I loved it though. Thinking back to the class discussions we had (sometimes debates), or the conversations out of class. Those are some of my fondest memories. The relationships I’ve been able to build are so sweet as well. I do believe that the friends I have now will be friends that I have for a lifetime.

Update over. I will continue on with my life and be back with more things to share.

My Memorial Day!

Hey, Guys!
So it’s been a pretty busy past couple months! This past May my whole family got together for Memorial Day at Granite Peaks. It was a bit chilly, but overall it was a ton of fun! Honestly, I don’t know if it’s even possible to be on top of a gorgeous mountain, with family… and food! and not have at least some fun! I mean, be real folks…. you can’t get much better than that!

…and can I just say….the kabobs were to die for!!

It was also a few days after Janelle’s birthday, and in my book, if there’s a birthday.…there’s gotta’ be a cake! so I took to Pinterest and found a patriotic cake recipe—-to go with the Memorial Day theme—-and I baked her up a cake!….It turned out wonderfully and tasted absolutely divine!!… You can get the recipe for it here

 Later on in the day we decided to go up to the lookout point that is on the mountain, and on the way up there, we came upon some big huge boulders that were randomly piled.  And, of course, Justus had to climb up to the veery top of them! All I can say is, kudos to him…I got about three-quarters of the way up before realizing that my life was worth more than out-doing my brother, so I reluctantly retraced my steps….

Granola {Oil Free}

Hi, Everyone!

This is my very first blog post! so here goes! 😀

So the past few days I’ve been having the itch to make granola but didn’t want it to have all that added oil, and processed sugars that store bought granola has in it, and I don’t know if you’re like me or not, but in my book, granola isn’t even granola unless it has those amazing clusters of goldeny goodness in it! but I thought that in order to get those coveted clusters, you had to add oil!! Not so, though!…. I found this recipe on Pinterest and thought I would give it a whirl! with my own little tweaks here and there. 😉
Instead of using brown sugar though I substituted it with pure maple syrup—best thing ever!!! and then here’s how you get those wonderful golden clusters…. once you have transferred your granola to the pan, squish it between your fingers, and then don’t touch it until it’s done! I know it sounds gross! But trust me it works! 😀

Granola {Oil Free}

Ingredients:
4 cups Whole Oats (don’t use quick oats!)
1 cup halved or sliced almonds
1/2 cup pure maple syrup
1/4 cup honey
2 tbsp. water
1 1/2 tsp. ground cinnamon
1 pinch ground nutmeg
1/2 tsp. salt
1 tsp. vanilla
1/4 tsp. baking soda
1 cup of dried berries (I used cranberries, but you could use raisins, dried blueberries, or even a combination!) *optional

Directions:
Preheat oven to 300 degrees F.
In a large bowl, toss the oats and almonds. Set aside.
In a medium saucepan combine maple syrup, honey, water, cinnamon, nutmeg, and salt. Bring to a boil, stirring frequently, and then while continuing to stir, let it boil for 1 minute. Remove from heat, add vanilla and baking soda, and stir till it gets foamy or about 10 seconds.
Pour the sugar mixture over the oat mixture, and stir until evenly coated.
Spread mixture evenly on a baking sheet (don’t forget to squish it!) and bake for 36-40 minutes.
Remove from oven, and toss in dried berries, and allow to cool completely. Store in an airtight container.
